Portobello Mushroom Recipe

Portobello mushroom

 

Mushrooms and Onion

  • 3-4 large Portobello mushrooms (stems removed, wiped clean)
  • 1 large onion cut into steaks the size of the Portabello mushrooms

Lay in a deep baking pan, spoon on the “dressing,” bake at  380 degree oven for 30 to 45 min.

Dressing:

  • 1/3 cup balsamic vinegar
  • 1/4 cups olive oil
  • ½ tsp cumin
  • ½ tsp black pepper
  • ¼ tsp smoked paprika
  • 3 cloves garlic (minced)
  • 1 Tbsp steak sauce
  • Dash cayenne pepper

Serve and top with chimichurri sauce.

Chimichurri

  • 1 ½ cups fresh basil
  • 3 cloves garlic (minced)
  • ¼ tsp red pepper flake
  • 3-4 Tbsp olive oil
  • 3 Tbsp lemon juice
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 small ripe avocado (cubed)

Chop basil finely, add in other ingredients

Gently spoon in the cooled, cooked lentils ( below)

Lentils

  • 1 cup cooked lentils
  • 1 tsp chili paste
  • ¼ tsp sea salt
  • ¼ tsp garlic powder
  • ¼ tsp onion salt
  • t Tbsp olive oil

Mix together.
