Adding this healthy bean salad to your packed lunch can help you to feel uplifted. Dr. Brian Wansink, Ph.D. and author of “Mindless Eating: Why We Eat More Than We Think, says there is a strong connection between eating foods you prepare and pack yourself and feeling good about what you eat. Enjoy!
15 oz. of Northern Beans
1 bulb of fennel
1 small red bell pepper
¼ cup orange juice
1 ½ T white wine vinegar
1/3 cup extra virgin olive oil
½ cup chopped fresh basil
2 T chopped fresh mint
1 clove garlic minced
Salt and pepper to taste
Cook, drain and rinse beans and place them in a large bowl.
Cut fennel into thinly sliced pieces about ½ inch in length, dice red pepper in ½ inch pieces. Add fennel and pepper to beans.
In a blender, combine orange juice, vinegar, olive oil, basil, mint and garlic and puree until smooth. Add to beans and fennel and toss to coat.
Season with salt and pepper. Serve about ½ cup scoop of beans on top of a bed of lettuce or over 3 slices of tomatoes.
Tossing fresh herbs like basil, mint or oregano into salads and sandwiches can add a dose of mind-boosting antioxidants and a burst of flavor.
