Ingredients:
Organic Kale
Fresh Cilantro
Fresh Parsley
Red Onion
Shredded Carrots
Sliced Beets
Mandarin oranges
Pumpkin seeds
Sunflower seeds
Pine Nuts
Vinaigrette
Olive Oil
Red Wine Vinegar
Raspberries
Honey
1 Clove of Garlic
Salt
Black Pepper
Red Chili Flakes
Raspberry Vinaigrette:
Emulsify the olive oil, red wine vinegar, raspberries, honey, garlic, salt, pepper and red chili flakes.
Kale Salad:
Toss together the kale, cilantro, parsley, red onion, carrots, beet, oranges, pumpkin seeds, and sunflower seeds with the vinaigrette in large glass bowl feel free to add any of your favorite proteins like salmon, tofu, or chicken. Toss and refrigerate for an hour or two…what i love about this, you can make it ahead and it only gets better.. enjoy!
