Coconut Chia Seed Pudding
Ingredients
• 2 cups of coconut milk
• 3 tbsp chia seeds
• 3 tbsp shredded coconut
• 1/4 tsp cinnamon
• Sliver of vanilla bean
• 1 tbsp maple syrup
• optional: shaved coconut
Instructions
1. In a mixing bowl, whisk together all ingredients (except garnish and maple syrup)
2. Poor into an air tight glass bowl, mix in nuts and drizzle the maple syrup over the pudding
3. Cover and refrigerate for 4 hours or overnight
4. Serve and garnish with, shaved coconut or berries
