Golden Goji-Chia Pudding

 Golden Goji-Chia Pudding

 

Ingredients

  • ½ C. Chia Seeds soaked in ½ C. Water, set aside in a mason jar
  • 1 ½   C. Almond or Coconut Milk
  • 1 Date
  • ½ tsp Tumeric powder
  • ½ Banana
  • 1 Tbls. Goji Berries

Drizzle of Maple syrup

  1. Blend in Vitamix milk, date, banana and tumeric
  2. Pour over soaked Chia Seeds stir in Goji berries
  3. Cover and refrigerate for 4 hours or overnight.
  4. Garnish with your favorite nuts or berries and drizzle with maple syrup

The goji berry, also called the wolfberry, is a bright orange-red berry that comes from a shrub that’s native to China.

Over time, people have used goji berries to try to treat many common health problems like diabetes, high blood pressure, fever, and age-related eye problems. Goji berries are eaten raw, cooked, or dried (like raisins) and are used in herbal teas, juices, wines, and medicines.
