Golden Goji-Chia Pudding
Ingredients
- ½ C. Chia Seeds soaked in ½ C. Water, set aside in a mason jar
- 1 ½ C. Almond or Coconut Milk
- 1 Date
- ½ tsp Tumeric powder
- ½ Banana
- 1 Tbls. Goji Berries
Drizzle of Maple syrup
- Blend in Vitamix milk, date, banana and tumeric
- Pour over soaked Chia Seeds stir in Goji berries
- Cover and refrigerate for 4 hours or overnight.
- Garnish with your favorite nuts or berries and drizzle with maple syrup
What Is a Goji Berry?
The goji berry, also called the wolfberry, is a bright orange-red berry that comes from a shrub that’s native to China.
Over time, people have used goji berries to try to treat many common health problems like diabetes, high blood pressure, fever, and age-related eye problems. Goji berries are eaten raw, cooked, or dried (like raisins) and are used in herbal teas, juices, wines, and medicines.
