Mushrooms and Onion
- 3-4 large Portobello mushrooms (stems removed, wiped clean)
- 1 large onion cut into steaks the size of the Portabello mushrooms
Lay in a deep baking pan, spoon on the “dressing,” bake at 380 degree oven for 30 to 45 min.
Dressing:
- 1/3 cup balsamic vinegar
- 1/4 cups olive oil
- ½ tsp cumin
- ½ tsp black pepper
- ¼ tsp smoked paprika
- 3 cloves garlic (minced)
- 1 Tbsp steak sauce
- Dash cayenne pepper
Serve and top with chimichurri sauce.
Chimichurri
- 1 ½ cups fresh basil
- 3 cloves garlic (minced)
- ¼ tsp red pepper flake
- 3-4 Tbsp olive oil
- 3 Tbsp lemon juice
- ½ tsp sea salt
- ½ tsp black pepper
- 1 small ripe avocado (cubed)
Chop basil finely, add in other ingredients
Gently spoon in the cooled, cooked lentils ( below)
Lentils
- 1 cup cooked lentils
- 1 tsp chili paste
- ¼ tsp sea salt
- ¼ tsp garlic powder
- ¼ tsp onion salt
- t Tbsp olive oil
Mix together.
