Roasted Kale Chips with Sea Salt
(Makes 2-3 servings of kale chips)
One small bunch of kale, about 6 oz.
1 T extra-virgin olive oil sea salt to taste
Preheat oven to 350
Cut away inner ribs from each leaf and discard, tear kale leaves into pieces (cracker size)
Wash the leaves and dry on a paper towel
Place kale pieces into a large bowl and toss with 1T of olive oil
Arrange kale leaves in a single layer on a baking sheet, then roast until they are mostly crisp, about 35 minutes
When chips are done to your liking, sprinkle with sea salt and enjoy
